We really ramped up our Popups and Specials in October! Check out some of the Highlights:
Feast of St. Francis
Plant-Based Takeover
When Salve reached out and asked us to put on a plant-based menu for the Feast of St. Francis, we couldn't wait! Our team served a variety of plant-based specials across several stations at Miley Café.
While we understand that not all students follow a plant-based diet, we encouraged students to step outside of their comfort zone to try something new.
Some of our most popular menu items included the plant-based burgers and gyros on the Grill, the Vegetable Bolognese on the Pasta Bar, and the Charred Tomato 3-Cheese Pizza on the Pizza Station.
Red's Best Sustainable Seafood Showcase
Red's Best is our local sustainable seafood supplier. On Thursday, October 12, we partnered with Red's Best to put on a Sustainable Seafood Showcase! Our display in Miley Café featured a variety of locally-sourced fish that can be found right here in New England.
Students were invited to check out our display and enjoy our special on the Entrée line. Our goal was to bring attention to local and sustainable meal options here in Rhode Island and surrounding areas, especially to some high-quality fish that many people may be apprehensive to try.
Oktoberfest
Executive Chef Parys put together a German inspired Oktoberfest menu on Monday, October 30.
Guests were encouraged to join us at the Grill during Lunch for a fun and festive Oktoberfest menu, complete with Schnitzel, Pretzels with Mustard and Beer Cheese, and crispy German Potato Wedges.
Halloween
Happy Halloween! Our Pastry Chef Jessi worked hard to put out a plethora of fun and festive Halloween desserts made in-house to celebrate the spookiest day of the year! Students were excited to try our ghoulishly good desserts, and they loved our haunted display.
The Teal Pumpkin Project
The Teal Pumpkin Project is an initiative supporting Trick-or-Treaters with allergies. While Halloween can be a dangerous time for kids with allergies and dietary restrictions, there are other ways to celebrate! A Teal Pumpkin represents a house that supports these Trick-or-Treaters by giving out safe non-food treats to enjoy.
Registered Dietitian Maeve put together a table in Miley Café on Halloween Day during Lunch to support the students who may not be able to indulge in our festive dessert specials. Maeve had several meaningful conversations with students on the concept and received a great deal of positive feedback. Of course, the stickers and temporary tattoos were a big hit with our students!
Plant-Based Spotlight
Kellogg's partnered with Salve Regina Dining to sample Plant-Based Incogmeato Chick'n Tenders on Tuesday, October 10 in the Miley Café lobby.
Representative Mark Botsch joined the Salve Regina Dining Team to educate students about plant-based options in Miley Café as well as the benefits of incorporating plant-based foods into your everyday diet.
Did you know that we regularly feature Incogmeato Vegan Chick'n Tenders on our menu? Whether it is an alternative to Chicken Nugget Friday or incorporated into one of our popups, this product has become a staple for Salve students who choose not to eat meat.
Keeping Up with the Trends
Black Tie Dinner
Featuring Carved-to-Order Prime Rib
Executive Chef Parys curated a special, high-class menu for a Black Tie Dinner (attire not required) served at Mongolian Grill on Monday, November 6.
Guests were invited to indulge in delicious Carved-to-Order Prime Rib, Lemon Asparagus, Au Gratin Potatoes, Broccoli Rice Pilaf, and more!
Boba Blast Bubble Tea Popup
It's no secret that Boba and Bubble Tea are in right now - and we want to capitalize on it for a trendy and unique popup!
We put together a Boba Blast popup at the Smoothie Bar on Thursday, November 9 during Lunch. This popup featured four types of tea (Thai Tea, Milk Tea, Taro Tea, and Plant-Based Matcha Green Tea) and three types of boba (Strawberry Bursting Boba, Brown Sugar Crystal Boba, and Lychee Jelly Boba), allowing students to customize their own beverage.

Peeled Apple Snacks
This is a great snack because it can be stashed away in your backpack and can have it handy when you are on-the-go. They have a nice sweet crunch and a good dose of fiber!
Wonderful Roasted & Salted Pistachios
Another great snack to have in your bag as you can easily transport and have at the ready when you are feeling hungry and ready for a snack.
- For optimal nutrition, combine a handful of the Peeled Apple Snacks and a handful of the Pistachios and you will have a balanced snack of carbohydrates, healthy fats, and a bit of protein for maintaining a steady blood sugar and sustaining energy throughout the day.
Overnight Oats
Looking for a highly nutritious breakfast or snack? Our Grab & Go Overnight Oats are nutrient packed full of fiber, protein and healthy fats that will keep you full for hours.

Salve Regina Student Weekly Dining Digest
We are continuing to release a weekly student newsletter highlighting upcoming holidays and events, retail promotions, UCook popups, and more! This information is being released on our Social Media platforms, in print at the entrance of Miley Café, and sent directly to students by the Salve Student Government Association and Residential Life department.
UCook Demonstrations
General Manager Mark Rodrigues set up shop in UCook to help students make their dishes. We understand that stepping into the kitchen can be intimidating, so we wanted to make the process more inviting.
UCook Featured Recipes - Every Thursday & Friday
Every Thursday and Friday, we are offering a UCook special recipe of the week! From Ramen Noodles and Street Tacos to Paninis and Burritos, we are encouraging students to explore and build upon their culinary skills with options they may not try day-to-day in the kitchen.
Win-it-Wednesday
Win-it-Wednesday is our Salve Regina Dining giveaway program! We work alongside Pepsi to promote products in exchange for fun, exciting, and premium prizes to give out to students. We ask students to engage with us on social media for the chance to be entered into our prize raffle. Keep your eyes peeled for more exciting Win-It Wednesday events!
