Tuna and Avocado Sushi Bowl IDDSI Level 5 - minced and moist

My mother is Japanese and sushi is one of my favourite dishes that she makes. I decided to create a deconstructed tuna and avocado sushi in a bowl so that all individuals can enjoy the classic flavours of sushi.

Ingredients

  • Tin of tuna
  • Ripe avocado
  • 4 Tablespoons of mayonnaise
  • 1/4 cup of short grain rice
  • 3/4 cup of water
  • Salt and pepper to taste

Method

Rinse the rice then add to a pot. Add 3/4 cup of water and bring to a boil.

Once the water is boiling, turn the heat low and cook for 15 minutes or until most of the water evaporates. Mix 2 Tbsp of mayonnaise with the rice.

Blend tuna and 2 Tbsp mayonnaise with a stick blender.

Mash avocado with a fork. Add salt and pepper.

Combine ingredients in a bowl.

Best served as soon as prepared as IDDSI tests have not been conducted in refrigerated conditions.

Please note: Rice requires mayonnaise to moisten it and hold it together. Rice should not be sticky or gluey and should not separate into individual grains when cooked and served. May require more mayonnaise to moisten and hold the rice together.
