IDDSI Level: Level 5 Minced and Moist
Ingredients
- 200g Lady Finger biscuts (store bought)
- 250g mascarpone
- 50g sugar
- 100 ml coffee
- 100ml cream
- Cocoa powder (for dusting)
Method
- Soak the ladyfingers in the coffee until soft (easily smashed with fork)
- Whisk the mascarpone, cream and sugar together in a bowl
- Put 1 layer of ladyfingers into a shallow bowl
- Add cream-mascarpone mixture on top
- Continue to layer the coffee-soaked ladyfingers and cream
- Dust with cocoa powder
Before eating: Attempt the spoon tilt and fork pressure test to make sure the dish has a minced and moist texture
