IDDSI Level: Level 5 Minced and Moist

Ingredients

  • 200g Lady Finger biscuts (store bought)
  • 250g mascarpone
  • 50g sugar
  • 100 ml coffee
  • 100ml cream
  • Cocoa powder (for dusting)

Method

  1. Soak the ladyfingers in the coffee until soft (easily smashed with fork)
  2. Whisk the mascarpone, cream and sugar together in a bowl
  3. Put 1 layer of ladyfingers into a shallow bowl
  4. Add cream-mascarpone mixture on top
  5. Continue to layer the coffee-soaked ladyfingers and cream
  6. Dust with cocoa powder

Before eating: Attempt the spoon tilt and fork pressure test to make sure the dish has a minced and moist texture
