My Grandma used to make me this whenever we would have a roast dinner. I really loved eating this as I never had it anywhere else and therefore it is very nostalgic for me. It tastes great with normal mashed potato too!
Directions:
Step 1: Wash and peel the sweet potatoes and cut them into medium chunks.
Step 2: Boil the potatoes until soft when prodded with a fork.
Step 3: Drain the potatoes and put them back into the pot. Add approx 2 tablespoons of butter and 2 tablespoons of milk (for each potato used).
Step 4: Mash the potatoes until it has reached the desired consistency.
Step 5: Season with finely grounded salt and/or pepper and enjoy!
IDDSI Guidelines - Level 4 (Pureed)
Fork test: When the fork is pressed to the surface of the food, it should leave an impression on the surface of the food.
Fork drip test: The food sample should sit in a pile above the fork. A small amount may flow through, leaving a little tail between the fork prongs.
Spoon tilt test: Sample should hold it's shape on the spoon. A full spoonful must plop off of the spoon if the spoon is tilted sideways. Very little food should be left on the spoon.
