Warning! This dish is not suitable for individuals requiring thickened fluids (as sorbet melts in the mouth).
This quick and simple sorbet recipe takes a total of 15 minutes. This is one of my family's go-to dessert options, especially in summer as it starts to heat up! You can add whatever frozen fruit you desire (e.g. blueberries, raspberries, mangos, strawberrries). My favourite is blueberries! All you need is castor sugar, frozen fruit, one egg white (and lemon juice if you like). A blender is required!
This recipe serves 4 portions.
Ingredients:
- 250g of your chosen frozen fruit
- 40g of castor sugar
- 1 egg white
- Lemon juice (optional)
Method:
- Pulse blender to crush fruits so pieces are small.
- Add in sugar.
- Add one squeeze of lemon juice while blender is off. Once added, run the blender briefly to mix.
- Whisk the egg white then blend altogether approx. 30 seconds.
- Serve immediately!

This recipe adheres to the requirements for an IDDSI Level 4 puree dysphagia diet, tested using the 'Spoon Tilt Test'. Pictures below show the sorbet to plop off the spoon easily when tilted, holds shape and leaves spoon with minimal sorbet still on.
