My Story
Lentil soup is a common dish in my Italian household! My family and I love to eat this dish in the colder months as it is highly nutritional and comforting. This recipe is from my Nonna and has been passed down.
Fun fact! It is an Italian tradition to eat lentil soup at the beginning of the new year to bring good luck.
Recipe
Ingredients:
- 1 cup of green lentils
- 2 stalks of celery
- 1 large carrot
- 2 cloves of garlic
- 1 potato
- 1L Chicken stock
- 1 tablespoon of Vegeta chicken stock seasoning
- 1 teaspoon of Italian herbs1 tablespoon of olive oil
- Salt and pepper as preferred to your taste
Method:
1) Dice onions, celery, carrot, garlic and potato
2) Drizzle olive oil in a pot and add onion, celery, carrot and garlic.
3) Sauté until the ingredients soften.
4) Rinse lentils and add them to the pot.
5) Add chopped tomatoes, potatoes, Italian herbs and chicken stock.
6) Put the lid on and bring it to boil, then turn the temperature down to simmer.
7) Occasionally stir and add more boiling water as it evaporates to cover the lentils, and repeat this step until the lentils are soft.
8) When the lentils are soft add salt, pepper and Vegeta chicken stock seasoning, and season to your liking!
9) When the lentils are completely soft, use a slotted spoon to drain the liquid and plate the food.
