Gluten Free Banana Bread
Blending can be done with a spoon, hand whisk or an electric mixer. Cakes are done when a toothpick inserted in the middle of the cake comes out clean.
Ingredients:
- Naturally White Cake Mix (16 oz.)
- 1 teaspoon of cinnamon
- 2 tablespoons of oil
- 3 small ripe bananas or 2 large, mashed
- 3 eggs
- 1 cup of chopped walnuts or pecans
Baking Instructions:
Place these ingredients in a bowl. Blend with a hand whisk or mixer. Pour the batter into a well greased loaf pan. (8 1/2 by 4 1/2). Preheat the oven to 350 F. Bake for 1 hour and 10 minutes. Drop the bread out on a wire rack and let cool for 1 hour or longer
Gluten Free Low Glycemic Banana bread
Ingredients:
- Naturally White Cake Mix (16 oz.)
- 3½ cups GF Pancake Mix (20 oz.)
- Or 3 1/4 cups GF APF, 2 tbs. sugar and 2 tbs. baking powder
- 1 tablespoon of cinnamon
- 6 small ripe bananas or 4 large, mashed
- 6 eggs
- 3 cups of walnuts or pecans
- 1 cup of unsalted roasted sunflower seeds
- 1 cup of ground flax meal
- 2½ cups of boiling water
- 1/4 cup of canola oil
- 2 loaf pans (8 1/2 by 4 1/2)
Baking Instructions:
Spray 2 loaf pans with nonstick, dust each with a tablespoon waffle mix. Place flax and cinnamon in a large bowl. Stir in boiling water. Wait 5 minutes while peeling bananas. Mash in the bananas. Mash in the eggs. Stir in the remaining ingredients. Transfer to loaf pansPreheat the oven to 350 F. Bake for 1 hour or more. Drop bread out onto a wire rack. Let cool 1 hour or longer before slicing

Gluten Free Pound Cake
The pound cake can be made in a Bundt pan. To make this, the recipe is doubled (2 cake mixes) and the baking time is increased to 1 1/2 hours. To prevent sticking, the Bundt pan should be sprayed with nonstick and dusted with cake mix.

- 1/4 cup of oil
- 1 can natural pumpkin puree (15 oz)
- 2 eggs
- 1/2 cup of raisins
- 1/2 cup of dried cranberries
- 1/2 cup of chopped walnuts or pecans
Baking Instructions:
Place these ingredients in a bowl. Blend with a hand whisk or mixer. Pour into a prepared loaf pan (8 1/2 by 4 1/2). Preheat the oven to 350 F. Bake for 1 hour and 20 minutes. Drop out on wire rack, cool 1 hour or longer
Pumpkin cake:
Add 1/2 cup of sugar, otherwise same instructions as bread above.
Low Glycemic Gluten Free Pumpkin Bread
Ingredients:

- 2 cans of pumpkin puree (30 oz. total)
- 1/4 cup of agave
- 1 teaspoon of pumpkin pie spice
- 1/4 cup of oil
- 6 eggs
- 1 cup of raisins
- 1 cup of dried cranberries
- 3 cups of walnuts or pecans
- 1 cup of ground flax meal
- 3½ cups of boiling water
- 2 loaf pans (8 1/2 by 4 1/2)

- 1/2 cup of chopped cashews
Baking Instructions:
. Place these ingredients in a bowl.. Blend with a hand whisk or mixer. Pour into a prepared pan (15 1/2 x 10 1/2 x 1). Sprinkle 2 cups of shredded coconut on top. Preheat the oven to 325 F. Bake for 30 minutes, glaze while hot
Glaze:
- 2 cups of powdered sugar.
- 2 tablespoons of melted butter.
- 6 tablespoons of milk.
Stir with a whisk or spoon until smooth

Mix 1/2 cup of cream cheese, 1/4 cup of butter. Slowly mix in 1 cup of powdered sugar

Soda Bread
Option 1:
Mix at room temperature.
Ingredients:
- 3 1/2 cups all purpose flour
- 1 teaspoon of baking soda
- 1 teaspoon of salt
- 1 3/4 cups of buttermilk
- 3 large eggs
Option 2:
Mix at room temperature
- 3 1/2 cups all purpose flour
- 1 Teaspoon baking soda
- 1 teaspoon of salt
- 1 1/4 cups of milk, soy milk, or almond milk
- 3 tablespoons of apple cider vinegar
- 3 large eggs
Baking Instructions:
Mixing is done by hand with a spoon. Spray a 8 or 9 inch round cake pan with nonstick spray and dust with 1 tablespoon of mix. Pour mix into a large bowl and blend in the baking soda. Add the buttermilk (or milk and vinegar) and eggs and stir till just mixed. Shape into a round flat shape in the cake pan and smooth top using a spoon with a teaspoon of water. Cut a cross in the top of the dough and place in preheated oven. A non-stick muffin pan can also be used to make 12 soda bread muffins, simply apply non-stick spray then bake. Bake for 45 minutes at 400 F. Flip bread out of pan onto a rack to cool. To make raisin bread add 1 cup of raisins, and add 10 min. baking time. Store in the refrigerator.

Gluten Free Jelly Cake
Choose any jelly for the occasion such as seedless blackberry jelly for Thanksgiving or orange marmalade jelly for #Christmas. This is a two layer cake made with one P
Option 1:

- 1 Petley Grain gluten free Naturally White cake mix (16 oz.)
- 3/4 cup of milk
- 1/2 cup of melted butter
- 2 large eggs
Preheat the oven to 325 F for a dark or nonstick pan or 350 F for a shinny pan. Spray pan with non-stick spray and dust with 2 tablespoons of the dry mix (or line with parchment for a foolproof approach). Blend the cake mix with the ingredients above. Pour into the cake pan.

For the Poundcake:
Ingredients:
- Naturally White Cake Mix (16 oz.)
- 1 cup of sour cream
- 1 tablespoon of oil
- 3 eggs
Place these ingredients in a bowl.. Blend with a hand whisk or mixer. Pour into a two well greased 8 inch pans with parchment placed in the bottom.. Preheat the oven to 325 F. Bake for 30 minutes. Cake is done when an inserted toothpick comes out clean.
Now after baking, cooling and removing the cake from the pan, place the first layer on a plate. Cover the top with jelly then place the second layer on top. You can dust the top with powdered sugar for a very nice looking cake.
