Shrimp Pad Thai
The Showcase station is known for delicious, made-to-order stirfry dishes, however, we like to elevate this experience with premium ingredients for our specials. With a flavorful pad Thai sauce, shrimp, eggs, and a wide variety of fresh-cut vegetables, this Shrimp Pad Thai special allowed students a variety of ingredients to make a truly customized dish.
Thai Chicken Pizza
We are serving delicious Sal's Pizza daily at the Miley Cafe Slices station, but we still like to switch things up and keep our pizza specials interesting. We served a sweet and spicy Thai Chicken Pizza on Sal's special Foccacia pizza crust.
General Tso's / Orange Chicken
Our Salve students go crazy for our Chinese food bars at Showcase. This past month we featured a General Tso's Chicken and an Orange Chicken bar complete with chopsticks, fortune cookies, dumplings, crab rangoons, and more! With a line all the way across Miley Cafe, it is safe to say that these specials solidified their place as Seahawk favorites.
Braised Chicken Bowl
Our Italian Braised Chicken Bowl takeover at Showcase featured fresh Garlic Bread, flavorful Braised Chicken, Orzo, Marinara Sauce, Italian Green Beans, a fresh Caprese Salad, and more! Guests were encouraged to build their bowl with their favorite ingredients for a hearty, custom, and delicious meal.
Arepa Plate
Showcase served house-made arepa bread from the bakeshop with delicious toppings including braised chicken, eggs, cheese, cilantro, pickled red onions, and more! Guests were encouraged to have their custom arepas loaded up with their choice of protein, toppings, and condiments.
Giant Custom Pizza Slice
We baked an extra-large pizza cut into 6 slices to allow students the opportunity to garnish a giant slice with their choice of pizza toppings and condiments.
Taco Salad
Everybody loves a zesty loaded Taco Salad! At Showcase, our staff made tossed-to-order Taco Salads with their choice of vegetables and proteins including spicy braised chicken and cumin jackfruit.

Chicken Nugget Friday
Everybody LOVES Chicken Nugget Friday at the Savory entree station! With the line snaking all the way through Miley Cafe, there's no doubt that our students look forward to nuggets and fries and make it a point to dine with us on Friday afternoons to get their fill. Even better, GF Chicken Tenders are always served in Simple Zone on Fridays to ensure all students can join in on the fun!
Milkshake Friday
Nothing hits the spot with Chicken Nuggets and Fries like a cold, sweet, creamy Milkshake. Our Smoothies & More station transforms into a Milkshake bar during Lunch on Fridays serving two Milkshake flavors of the day! There is no better way to get yourself set for the weekend than indulging in your choice of milkshake with your friends here at Miley Cafe.
Bliss Dessert Bar
The Bliss dessert bar is always stocked with a variety of grab-and-go cookies as well as decadent desserts made in-house by our pastry chef. If you have a sweet tooth or are looking for something sweet after a savory or spicy meal, know that you have options when you come to Bliss! Ice cream is also served in Miley Cafe by the Smoothies & More station, perfect for an Ice Cream Cookie Sandwich!
Battle of the Chefs
On Tuesday, October 1, Chef Rose Forrest and Chef Andrew Pereira challenged Executive Chef Parys Fortini to a Battle of the Chefs! Each chef made a different custom dish to serve to Salve students and community members dining at Miley Cafe for Lunch using locally sourced produce and ingredients.
Mix
Executive Chef Parys Fortini and Cook Normajean Gendron created a variety of Summer Rolls including plant-based options, a fruit option, and more! Parys and Normajean set up shop at the Mix salad bar and made custom, tossed-to-order Asian salads with locally sourced produce and a delicious sesame dressing.
Sizzle
Chefs Rose Forrest and Andrew Pereira served an Indian-Style Fish and Chips dish using local drum rock batter, locally caught cod, fresh produce from local farms to make sides including Hand Cut Fries, flavorful Slaw, and more! Served with Vegetable Pakora and a variety of rich and flavorful dipping sauces.
In an additional effort to make a positive environmental impact and educate the Salve community on sustainability, we set up a compost bucket to demonstrate the amount of food waste and scrap accumulated and show how this can be used to give back to our local farms through healthy, nutrient-dense composted materials.
The results were neck and neck, but in the end our Executive Chef here at Salve (Parys Fortini) emerged victorious! Parys was presented with a trophy and congratulations at our daily huddle from staff members, managers, and Chef Andrew Pereira, Parys' competition.
THX4MakingMyDay
The Salve Regina Dining staff works hard to create a welcoming, comfortable, and safe environment for Salve students and staff. From culinary to front-of-house, our team demonstrates a strong pride in food and service. We want to hear from you - let us know about a staff member who went above and beyond to help you or make you smile and we will be sure to celebrate their hard work with our staff. We oftentimes announce these comments at our daily huddle to show our staff that their day-to-day efforts make a much larger impact.

Crunch Lab
With General Mills
Salve Regina Dining partnered with General Mills to host a Crunch Lab event in Miley Cafe. Guests were invited to create a bag of cereal trail mix to-go with a variety of cereal options and mix-ins available at the Smoothies & More station. Ingredients included seeds, candies, pretzels, and more to create a sweet grab-and-go treat to enjoy throughout the day.
Fall Into Healthy Habits
Jackie Potvin - Registered Dietitian
Registered Dietitian Jackie was excited to hit the ground running with a mindful Fall event in Miley Cafe. Jackie set up shop in the Miley lobby to educate students on healthy habits, meal hacks, and dorm snacks.
Not only was this a fun event with a tasty snack, but it also served as a way for Jackie to get some student exposure, meet some of the campus community, and demonstrate her services to interested students. A plethora of guests stopped by for a treat and had questions for Jackie on dietary accommodations, navigating the dining hall, and other services that she can provide to our community.
Jackie reinforced her message by serving custom-made Apple Slice "Donuts". These apple slices were topped with Sunflower Seed Butter or Greek Yogurt as "frosting" and were topped to order with ingredients including sliced strawberries, granola, sprinkles, and chocolate chips.
