September 30, 2024 . . . "At DINS Santi Taura we have been creating our wine list for five years," says Joan Arboix, the maître and sommelier of DINS Santi Taura. "It is a slow, constant and even obsessive process for me. The wine list tries to reflect the wine concerns of our island, the plurality of the Spanish regions and the diversity of grapes that make up unique styles such as in Galicia, Jerez or Priorat, and we also show the respect and admiration that I have for the wines of Germany, Italy and France. I am fortunate to have been able to put together, little by little, a selection of wines that reflect and transmit the best of their origin through the liquid part to accompany the gastronomic experience that Santi delivers."
DINS currently has a selection of 600 wines the cellar.
Santi's cuisine is Mediterranean, with flavour, cooked slowly through taste memory, without fanfare, with his feet on the ground. Gastronomic tradition in the format of a temporal and historical tale. And this is where the liquid part, also without fanfare, accompanies his gastronomy based on the Balearic history.
It is true that there is diversity in our wine proposal, and we understand that our customers may enjoy different types of wines, but in my way of understanding DINS, there are three pillars which are the best way to accompany, in an excellent way, our cuisine:
The first is to vindicate the diversity and emergence of local varieties, in any of their possible forms, which unites us more to the territory and represents us more. We give presence to young and modest projects, as well as to more established winemakers, but always committed to our territory. Their uniqueness, tenacity and quality make them great ambassadors of our islands. The sun in sips.
Also, through the wisdom shown by the wines of Burgundy, which for me are a weakness and represent the paradigm of order and diversity with only two varieties. Differentiation in an inch of land, a vineyard of tenacity, balance and perseverance over time, which always shows us its origin, firmly linked to the hands of those who work the land without wanting to be the protagonist. Bottled haute couture. For those who love Burgundy and despite the difficulties in finding great Burgundies, we have established relationships with and stocked producers such as Leflaive, Ramonet, Bonneau du Martray, Denis Mortet, Dujac, Meo Camuzet or Lafon together with lesser-known names such as François Mikulski, Thomas Pico, Bruno Lorenzon or Charles Lachaux.
And last but not least, the hedonism that bubbles always give us. Both from the great national sparkling wines, which are usually unknown to the majority of consumers, and from the less known vignerons of Champagne, whose wines show serenity, depth and the forcefulness of the ‘happy wine’. Because of my special devotion to champagne, we have added names like David Leclapart, Jacques Selosse, Henry Giraud, Jerome Prevost, Egly Ouriet (and up to more than 40 different producers) are regularly on our list. Champagne is the only wine in the world that you never drink when you are sad or upset. The perpetual smile.
"The world of wine is infinite and, as in everything else, to be understood as a whole, it must be progressive. That is why our recent path must be built with an eye to the future, in contact with new concerns and trends, but without ever forgetting the origin, the memory and the path already travelled, thus respecting the most classic part of wine, together with those historical regions that change and transform themselves irremediably. That is why there is also room for these long-lived wines that, when uncorked, speak to us of a moment, a period, a world that no longer exists and that forms part of the liquid memory, " says Arboix.
Adding to the dining experience at DINS we have selected two types of glassware: Zalto heralds from a small village in Austria, where the art of glassblowing dates back to the Renaissance era. They are one of the most revered makers of luxury wine glasses in the world, blending centuries-old Venetian glassmaking techniques and modern aesthetics to produce fine, functional glassware that enhances every aspect of the wine drinking experience. In addition, Josephinenhütte glassware is mouth blown with a craftsman's touch, it is light as a feather creating an illusion that there is nothing between you and your wine. These glasses unlock the wine's true potential intensifying aromas and flavors.
We offer diners two possible pairings to accompany their menu. In one we reflect the whole universe of the Balearic Islands with the singularity and concerns shown by the almost 90 wineries that we currently have in the archipelago
In the second, more extensive proposal, we give a tour of the country's diversity, showing the richness of its soils, climates and wine styles so that we can enjoy the largest vineyard in the world.
