About Sylvesters
Sylvester's Burgers is a San Luis Obispo County favorite. The burger joint first opened its doors in Los Osos in 1988. Over the decades, Sylvesters has become known for its hearty proportions and crowd pleasing menu options. Their next location was opened in Atascadero around 2008. After building a loyal following along the Central coast, SLO county just couldn't get enough. Sylvesters then expanded to downtown Paso Robles, opening at 1227 Pine St, formerly operated as Ziggys, a fully plant based take out restaurant. But what's so special about another Sylvesters? The Sylvesters located in Paso Robles still offers all menu items from Ziggys, being the only Sylvesters that provides vegan options. Guests can enjoy many delicious dishes all the way from a traditional burger and fries to a vegan crunch wrap supreme. With a surplus of both locals and tourists visiting downtown Paso, Sylvester's is a great restaurant to enjoy a multitude of foods for everyone.
As Crimson journalists, we decided to try it out for ourselves, ordering a variety of items from their menu and reporting the delicious results here. Read all about it and decide for yourself if Sylvesters is worth a try!
California Burger

While simple, this burger was packed with flavor and delight. The burger was filled with pepper jack cheese, a tender patty, avocado, onion, tomato, lettuce, and their secret Sylvester sauce. The avocado provided a lovely creaminess along with the sauce, which is what really made it stand out compared to a regular burger. The sauce seemed so simple yet so effective, the peppery flavor of it, and the overall taste made the burger that much more enjoyable . The flavors complemented each other well and the burger patty itself was perfectly tender and cooked medium rare with a melted slice of pepperjack, adding to the taste. The burger was superb, everything being well suited, 5 stars/5 stars.
Heart Attack Burger

The heart attack got its name for a reason. The burger has an extremely flavorful patty with a fried egg, bacon, avocado, lettuce, tomato and onion with a fluffy bun. The bacon was very flavorful and crispy and the egg contributed to the burger perfectly. Everything was wonderfully cooked including the patty and egg. The Sylvester sauce really made all the difference adding even more flavor to the burger. The burger was also very fulfilling even though I got a Babyback Wood size. I could definitely see why this is one of their most popular burgers and would personally give this masterpiece a 4.5 stars/5 stars.
Regular Fries

The fries had a soft and tender inside, but these were just your average fries. They weren’t bad but also nothing crazy. The outer texture lacked crispness and seasonings. You could taste the salt and garlic powder but compared to the sweet potato fries, they weren't out of this world. They were a simple thick cut fry, not skinny or thin, providing a dense and hearty fry. They were very filling and overall an exceptional basic basket of fries, receiving 2.75 stars/5 stars.
Sweet Potato Fries

The fries came out quick, in a simple brown paper tray. They were a nice golden orange with hints of caramelized brown edges, topped with a light coating of powdered sugar. The fries were crinkle cut style, causing them to provide a nice crisp layer on the outer edge while leaving the inside of the sweet potatoes very light and fluffy. There was a nice balance of sweet and savory between the sweet potatoes with powdered sugar and the seasonings that came with it. These sweet potato fries were a solid 4 stars/5 stars.
Sylvesters Chilli

At the first bite you can taste the overflowing flavor that comes from this Chilli. The Chilli was layered on the surface with cheese that was perfectly melted and finished with a sprinkle of diced red onion. The beans definitely had a powerful peppery taste however the cheese perfectly matched the spiciness and “kick” the chilli had to it. The different elements of the chilli all complimented each other and ultimately gave a very balanced flavor. 4 stars/5 stars.
Vanilla Milkshake

Although straightforward, it was a very good shake. It wasn’t too sweet or bland and had an impactful vanilla flavor. Rather than a vanilla paste or extract, you could savor the natural and pure flavor of vanilla bean along with an enjoyable texture. It wasn’t your ordinary shake that's hard to drink through a straw, but a rather fluffy and light shake. It was almost more airy, and topped with their thick whipped cream. So simple but so good. It was a very satisfying shake and not too hard on the stomach. This shake was pleasant and if you like a light milkshake this will do the trick, deserving a 4.2 stars/5 stars.
