As a Banquet Chef, you will be responsible for planning, organizing, and executing all banquet functions, ensuring that each event is executed flawlessly. You will work closely with the event planning team, Executive Chef, and Executive Sous Chef to design menus that meet our member's specific needs and preferences while adhering to budgetary constraints. You will supervise kitchen staff, manage inventory, and maintain the highest food quality and presentation standards. You will also ensure compliance with all health and safety regulations. RESPONSIBILITIES
- Supervise and train kitchen staff to ensure high food preparation and presentation standards, including writing daily production sheets based on BEOs and the quantity of bulk production items.
- Work closely with the Staff Meal and Production Manager to use all excess event food. This would include a weekly meeting about cross-utilization.
- Follow any direction given by Executive Chef or Executive Sous Chef.
- Manage inventory and order supplies as needed.
- Ensure compliance with health and safety regulations.
- Implement and maintain kitchen safety protocols.
- Coordinate with other departments to ensure seamless event execution.
- Monitor food quality and presentation to maintain high standards.
- Develop and test new recipes for banquet menus.
- Manage kitchen budget and control costs.
- Oversee the setup and breakdown of banquet kitchen stations.
- Maintain a clean and organized kitchen environment.
- Handle member feedback and resolve any issues promptly.
- Ensure timely delivery of food to banquet events.
- Conduct regular staff meetings to communicate event details and expectations.
- Stay updated on industry trends and culinary techniques.
- Participate in menu tastings and client meetings.
JOB REQUIREMENTS
- Prior experience as banquet chef or sous chef with banquet experience is required.
- 5 years of culinary experience, at least 3 years in a supervisory role.
- Strong leadership and team management skills.
- Excellent organizational and multitasking abilities.
- Ability to work under pressure in a fast-paced environment.
