IDDSI testing

This recipe is incredibly easy to make (time: 15 minutes) and serves 6 people. This recipe contains dairy and gelatin, however substitutes are outlined below.

The mousse successfully passed the spoon tilt test, as it was cohesive enough to hold its shape on the spoon and fell off when slightly shaken, leaving very little food behind. It also passed the fork pressure test, as particles easily separated between the prongs and could be mashed with minimal pressure

Ingredients

  • 2 cups heavy cream (thickened cream or whipping cream)
  • 1 cup Milo powder
  • 1/2 cup icing sugar
  • 2 tablespoons gelatin powder
  • 1/4 cup cold water

Method

  1. Prepare Gelatin: Dissolve the gelatin powder in cold water and let it bloom for 5 minutes.
  2. Dissolve Gelatin: After blooming, heat the mixture gently in the microwave or over a double boiler until fully dissolved. Set aside to cool slightly.
  3. Mix Milo and Icing sugar: In a mixing bowl, combine the milo and icing sugar.
  4. Whip Cream: In a separate large mixing bowl, whip the heavy cream until soft peaks form.
  5. Add Milo and Icing Sugar: Gently fold the Milo powder and icing sugar into the whipped cream until well combined.
  6. Incorporate Gelatin: Gradually add slightly cooled gelatin into the whipped cream mixture, stirring constantly to ensure it’s evenly distributed.
  7. Chill: Divide the mousse into 6 serving cups and refrigerate for at least 1 hour to set.

Keep refrigerated and consume within 2-3 days.

Dietary substitutes

Dairy free

  • You can replace thickened/whipping cream with:
  • 2 cups coconut cream (chilled in the fridge overnight)
  • 2 cups soy cream
  • 2 cups oat cream

Halal

  • Replace gelatin with agar-agar (plant-based gelling agent derived from seaweed)
  • Check the packaging to ensure it has a halal certification, just to be certain there are no additional non-halal ingredients or cross-contamination during processing.

Vegan

  • Replace thickened/whipping cream with dairy alternatives outlined in "dairy free"
  • Replace gelatin with agar-agar
