Popcorn Chicken Bowl
When you think comfort food, a popcorn chicken bowl is sure to come to mind. Showcase transformed into a finger-licking good popup featuring crispy fried chicken, mashed potatoes, macaroni and cheese, fresh biscuits, corn, gravy, bacon, and more! Students and staff alike were excited and anticipating this popular menu special.
General Tso's Popup
With a line around the corner at Showcase on Wednesday, October 23, it's safe to say our Seahawk community enjoys our General Tso's special! Guests were able to indulge in crispy General Tso's chicken, fried rice, broccoli, and premium sides including egg rolls, crab rangoons, dumplings, fortune cookies, and more!
Fish Po'Boy
Sizzle spiced things up on Friday, October 25 with a beer-battered fried fish po'boy, served with hand-cut fries and a variety of specialty toppings and condiments.
Chicken Parmesan
Chicken parmesan is a classic and a university dining staple. Our culinary staff served hand-made chicken parmesan complete with spaghetti and garlic bread on the side. Lunch Cook Garfield went above and beyond to make a hand-made gluten-free breaded chicken parmesan for Simple Zone. Our guests couldn't get enough of this delicious, comforting, and fan-favorite dish.
Macaroni & Cheese Toppings Bar
Who doesn't love macaroni & cheese? Showcase served creamy white cheddar macaroni & cheese alongside a variety of toppings, cheeses, and more on Wednesday, November 6 during lunch. Guests were able to have a custom dish built with their choice of ingredients complete with a meat and plant-based protein option.
Sal's Custom Big Cheese Pizza Slice
Guests were welcomed to the Slices station for lunch on Thursday, November 7 for a custom Sal's Pizza experience! Students had their extra large slices garnished to order with their favorite toppings, cheeses, condiments, and more.
Mindful Tips from Jackie
- Eat the rainbow! The color pigments in different fruits and vegetables all have unique benefits. Add some vegetables from the Mix station to your meal.
- Participate in Meatless Mondays! Switch out a meat-centered meal for a delicious vegetarian dinner at Sprouts. Sprouts offers protein options like garbanzo beans, tofu, quinoa, and plant-based meat substitutes.
- Mix and match! Incorporate foods from each station to make a complete meal including protein, carbohydrates, and fats. For example, pasta from Twists with chicken from Savory, and vegetables and cheese from Mix.
- Make it a wrap! Opt for a whole-wheat wrap instead of white bread or a sub roll from the Stacked deli. Whole grains provide fiber and healthy fats to keep you full longer.
- Think about your drink! Sugar from soda adds up quickly, especially if you are choosing soda once or twice daily. Seltzer is a great alternative to soda. Mix half soda or juice with half seltzer to cut back on sugar.
- Start small! The many different choices in Miley can be overwhelming. Build a small serving of food to start, knowing you can always go back for more. Too much food on your plate can lead to overeating and food waste.
National Food Holidays
National Nacho Day
On Wednesday, November 6 during Lunch, the Smoothies & More station was transformed into a National Nacho Day popup featuring made-to-order plates of nachos. Guests were encouraged to stop by to celebrate National Nacho Day with tortilla chips topped with their choice of seasoned taco meat, spicy nacho cheese sauce, pico de Gallo, sour cream, and jalapenos. This national food holiday popup was a big hit for our Seahawks!
National Indian Pudding Day
The Miley Cafe Bakeshop served a warm Indian pudding with fresh whipped cream at the Bliss dessert bar to celebrate National Indian Pudding Day on Wednesday, November 13 during Lunch. This dessert was the perfect way to warm up on a chilly Autumn afternoon.
National Apple Cider Day
Miley Cafe encouraged guests to join us in celebrating National Apple Cider Day during lunch on Monday, November 18. We served sweet and delicious locally sourced apple cider from New England Apple Products Co. located in Leominster, Massachusetts.
Did you know that the featured Harvest of the Month for November is apples? Our culinary staff has been incorporating locally sourced apples into our menu items as a part of our Rhode to Impact initiative to support local farms and businesses. We are fortunate to live in an area so rich with resources including a wide variety of produce, fresh seafood, sustainable dairy, and more!

Giveaways
Win-it-Wednesday is back! We regularly post instructions and information on our giveaway program on Instagram @SalveReginaDining. Be sure to keep an eye out for posts with instructions on how to enter and win an exciting mystery prize! Winners will be contacted to pick up their prize and featured on our Instagram page. We are excited to get this crowd-pleasing program back up and running to keep the Salve community excited and engaged.

Sustainable Seafood Showcase
Salve Regina Dining partnered with Red's Best to bring our community a sustainable seafood showcase, complete with a variety of locally caught fish that one may not think to eat.
Living in the Rhode Island/New England community, seafood is a great resource and a nutritious dietary option. We challenge our guests to eat more local seafood options to reduce their carbon footprint as well as to enjoy the local delicacies that our oceans have to offer.
Alongside the display, Miley Cafe served a grilled yellowfin tuna caught by Jonathon Holdgate and sourced from Chatham, Massachusetts. Sharing this information allows our guests to understand just how simple shopping and eating local can be as well as to educate guests on some of the best food that Rhode Island has to offer.
Have you dined with us at the Sprouts vegan and vegetarian station in Miley Cafe? Located directly to the right of the Savory entree station, Sprouts offers a wide variety of hearty, nutritious, and culturally diverse menu items free of animal-based products. Whether you are looking for a complete nutritious plant-based meal, a side for another dish, or an ingredient or two to beef up your UCook dish, Sprouts is sure to impress!
Halloween
Featuring Festive Desserts from the Miley Cafe Bakeshop
Jessi and Rosa from the Miley Cafe Bakeshop pulled out all the stops when it came to our annual Miley Cafe Halloween dessert display! Alongside a wide variety of Halloween candy, the Bliss dessert bar was decorated with monster cupcakes, festive cookies, chocolate chow mein monsters, graveyard-themed dirt pudding, cereal bars, whoopie pies, pumpkin cheesecake brownies, and more! Guests were excited about all of the fun treats and flocked to the dessert station immediately upon entering the Cafe to celebrate with these spooky sweets.
Teal Pumpkin Project

Registered Dietitian Jackie hosted a Teal Pumpkin Project booth on October 30 and 31 promoting the the allergy-friendly Halloween initiatives of Food Allery Research & Education (FARE).
The Teal Pumpkin Project was created to ensure all individuals can enjoy a safe, inclusive Halloween.
The Teal Pumpkin is used to symbolize that Halloween treats will not be food- related, rather will be trinkets or other small treats/toys to ensure that individuals with allergies will not need to be concerned about having candies with any allergens and can still enjoy the holiday in an inclusive environment.

Affy Tapple
Did you know that the original caramel apple was created and distributed by Affy Tapple in Chicago in 1948? We brought this classic product to Miley Cafe to celebrate Halloween and educate our guests on the history of this classic autumn treat.
Guests could choose between a classic caramel apple or one topped with sprinkles. These sweet treats went fast and were a big hit among our diners.

Meal Exchange Program News
The Meal Exchange Program is available for Breakfast from 7:30 - 10:30 a.m. on Monday-Friday. Jazzman's is the perfect place to grab a quick bite to energize in the morning on the way to class. Students can enjoy their choice of a bagel, a piece of fruit, yogurt, or oatmeal alongside coffee, juice, tea, or hot chocolate.
Students are welcome to stop by McKillop Library Cafe to use the Meal Exchange Program on Sunday-Thursday from 11:00 a.m. - 5:00 p.m. for Lunch and from 5:00 p.m. - 11:30 p.m. for Dinner. Lunch is also available on Fridays from 11:00 a.m. - 2:00 p.m. Guests can expect a wide variety of mindful salads and sandwiches to choose from. Our options are always diversifying and Gluten-Free and Plant-Based options are available.
